Lentil Soup with Tomatoes, Spinach & Feta

I surveyed the recipes I've posted and see I could use a few more soups. So here's another great and easy soup recipe with lots of nourishing ingredients. A bit-o-green from spinach for St. Patrick's Day is a bonus.

This soup is easy, but you do have to plan for time to have the lentils soften. Start the soup in the early afternoon and let it cook while you do other things. You can also put the ingredients in the slow cooker in the morning on low and add the spinach and lemon juice a half-hour before you plan to serve it.

Use what ever curry you like for this soup, but I used Baagan Immunity Booster Spices. You can order them online or get them at the restaurant in Roseville, CA.

What is Real Food?

Just because a food product says its real or natural means nothing. In fact, I am suspect that it is far from real.

Case in point. I've just returned from a road trip with my hubby to visit a number of friends. Being a foodie, I can feel comfortable in anyone's kitchen making breakfast, lunch or dinner. In the three kitchens I maneuvered about these past 10 days, I found three jars of Best Foods Mayonnaise.

Cauliflower, Brussels Sprouts & Red Beans

Do you have family that do not like brussels sprouts? Maybe that's you. Who me? In my house that's my husband. I love brussels sprouts, so I'm always looking for a recipe that would show off the greatness of this miniature cabbage. So how about a recipe that throws in another veggie that some are not fond of... like cauliflower.

This delicious side dish can be served as a main dish and is best served right away. You can prepare the dish through Step 4 ahead of time. Remove the dish from the heat and let sit for up to an hour, then reheat and proceed with Step 5.
