A Diet That Works

By now any diet you embarked on at the beginning of the year has been relegated to one of three categories: it's working, it's too hard, or it's on to the next thing.

Let's talk about a change in thinking—what is diet? I will always refer to diet as the sum of food consumed by a person, not the restriction of food. Really, if you eat a healthy diet as I outlined in The Road to Health Comes Down to Diet, you won't need to restrict the amount you eat.

Making a Green Veggie Shake

The healthiest food we can eat are greens: arugula, collard greens, mustard greens, beets greens, spinach, chard, dandelion greens, kale, sorrel, turnip greens, mizuna, etc. You may have never heard of some of these green gems, but they are a powerhouse of nutrients. They are rich in vitamins (including K, C, E and many of the B vitamins), minerals (including iron, calcium, magnesium and potassium) and phytonutrients (including lutein, beta-carotene and zeaxanthin). Oh and lets not forget fiber—lots of it. Eating greens can be part of an arsenal to combat cancer, diabetes, inflammation and heart disease.

Healthy Snacks for Super Bowl Sunday

So you've decided to make healthier choices in eating, but you're having a Super Bowl Party. Don't panic! There are plenty of healthy choices you can serve at your party. Here are some of my choices:

  • Grapes
  • Plate of cut-up veggies (carrots, celery, broccoli, jicama)
  • Hummus dip (tomato basil or roasted garlic)
  • Cowboy caviar (see recipe) with tortilla chips
  • Fish taco bar: flour and corn tortillas, grilled fish, grated cheese, shredded cabbage, cut-up tomatoes, chopped onions, peppers and salsa

Cowboy Caviar Recipe

Ingredients
2 Tbsp red wine vinegar
1 1/2 - 2 tsp hot sauce
1 1/2 tsp extra virgin olive oil
1 clove garlic, minced
1 firm-ripe avocado
1 15 oz can black-eyed peas
1 1/2 C frozen corn kernals, defrosted
2/3 C green onions, sliced thin
2/3 C fresh cilantro, chopped
1/2 lb Roma tomatoes, coarsely chopped
Salt and pepper
1 bag tortilla chips
