Tomato & Cucumber Salad

Getting ready for a bountiful harvest from your garden suggests the need for a list of salad recipes to have on hand. Here's one recipe you'll want to add to your list.

I threw this together with ingredients I had on hand. It's easy and takes very little time to make. Plus it tastes great. Of course it managed to show up when I made dinner for friends we had over a few weeks ago. It was enjoyed by all.

Start by gathering all the ingredients. Can you tell me which ingredient didn't make the photo? It happens a lot. I forgot to pull out the apple cider vinegar. I use Bragg Organic Raw Unfiltered Apple Cider Vinegar. Be assured it made it into the salad.
I partially peeled the cucumbers so the tough skin is partially removed. Use a peeler and scrape the cucumber lengthwise leaving a small strip of skin as you work around the veggie.

  1. Wow, love this combo! :)

  2. A nice tangy dressing sounds awesome with the cucumber. Definitely going to keep this one handy for when I start seeing tomatoes and cucumbers at the Farmer's Market! Thanks for sharing this with Summer Salad Sundays, look forward to seeing you again soon!
