Blueberry & Cucumber Salad with Feta
Blueberries are approaching their peak right now and cucumbers, lettuce, mint and green onions are being harvested from the garden. This salad is a refreshing crunch with a panoply of tastes. The mild flavor of blueberries mellows that of the salty feta and sharp-tasting mint.

Blueberry & Cucumber Salad with Feta

From Wall Street Journal
Yield 4 - 6 servings

Ingredients
2 Tbsp extra virgin olive oil
2 Tbsp apple cidar vinegar
1 tsp raw honey
Salt to taste
Black pepper to taste
3 heaping C blueberries, washed
2 cucumbers
3 green onions, thinly sliced
1 heart of lettuce, chopped
2 C lightly packed mint leaves
1 C crumbled feta

Directions
1. In a small bowl, whisk together oil, vinegar, honey, salt and pepper.
2. Peel cucumbers, cut lengthwise and scrape out seeds. Cut into 1/2-inch diagonal pieces.
3. Combine blueberries, cucumbers, green onions, lettuce and mint in a large bowl.
4. Drizzle dressing over salad, toss and serve sprinkled with feta cheese.
