Oatmeal Cookie Recipe















Sugar-free, Dairy-free

Yield 3 dozen

Ingredients
1/3 C chunky almond butter
2 ripe bananas
1 tsp vanilla
2 Tbsp soy milk
2 Tbsp maple syrup
1/2 tsp baking powder
2 1/2 C rolled oats
1 egg
dash cinnamon
dash cloves
1/4 C flour
1/2 C raisons

Directions
1. In a large bowl, mash bananas with fork until smooth.  
2. Add almond butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients, except raisons, and stir until well combined.
3. Mix in raisons. 
4. Drop spoonful of dough onto ungreased cookie sheet.
5. Bake at 350 degrees for 13-15 minutes, or until done.

Notes:
• Variations: use mixture of golden raisons and dark raisons, or use mixture of rolled barley, wheat, rye and oatmeal. 
• Leave out egg to make the recipe Vegan.

  3. So if I'm staying away from gluten, should I stay away from oats? Because these cookies sound really really good!

    The issue with oats and gluten is not that oats contain gluten, but they are contaminated by gluten having been processed where there is wheat. So unless you have celiac's disease, you are probably alright eating oats. Bob's Red Mill makes gluten-free rolled oats if you want to play it safe.
